As previously mentioned around these parts, my baking skills are basically non-existent. Almost every thing i try my hand at when it comes to baking fails miserably, be it i read the instructions wrong and add in a ludicrous amount of baking soda leaving the mixture to expand at a rapid pace, or i simply just lack the intelligence to time the dish in the oven. After many failed attempts at baking where the goods go up in smoke(quite literally), i decided to venture back to basics to goods which don't require any oven baking.
I first came across this Nutella Cheesecake when i seen this YouTube video, in which Doug Armstrong made it. As a chef, it was inevitable that he was a dab hand at it, and that his turned out many, many times better than mine ever would but i thought as there was no oven involved, it seemed pretty safe.
In the end it turned out surprisingly edible and tasted deliciously heavenly. Even though the taste of Nutella was not as rich as i had initially imagined, this went down as quite a treat with my family and required an inconsiderable amount of effort.
INGREDIENTS:
250g Digestive Biscuits
75g Butter
400g Jar of Nutella
100g Chopped Hazelnuts
400g Cream Cheese
60g Icing Sugar
RECIPE:
1. Whizz the biscuits, butter, 15ml of Nutella, and 25g of Hazelnuts in a food processor until you have a damp sandy mixture. Place into a 9 inch dish, and press into the base. Place in the fridge to chill.
2. Place the cream cheese, the remainder of the Nutella and the icing sugar in the food processor, blitz until they are all combined and you have a thick, creamy mixture.
3. Smooth the cream cheese mixture on top of the biscuit base. Sprinkle the remaining chopped hazelnuts on top. Place in the fridge for at least 4 hours, or preferably over night (this part is a real test of one's patience!!)
4. Fast forward 4-12 tedious hours later, and voila you've got a delicious Nutella cheesecake to devour! To avoid death by Nutella, enjoy little amounts of this every 2-3 hours..
This Nutella Cheesecake recipe is foolproof and perfect for us butter fingers, albeit, the waiting process really does test one's patience - i'll let you determine whether it's worth it.. I say it is.
